2016 Event: Harmony Hall Nose to Tail Beer Pairing Dinner
On April 24th, 2016 the Slow Food West Michigan community gathered together at Harmony Hall for an exceptional 5-Course dinner with Provision Family Farms pork.
Harmony Hall is a champion of nose-to-tail cuisine and well known for locally crafted brew and passionate dedication to supporting local, sustainable purveyors. A portion of the proceeds went to benefit the Slow Food Biodiversity Micro Grant program and to select small scale local farmers.
Menu:
Amuse Bouche
Can·a·pé- rye bread, whipped Dancing Goat chèvre, corned pigs tongue, pickled green strawberry, seasonal micro greens
First Course:
Charcuterie and Cheese- a selection of house made meats and local cheese with accouterments
Second Course:
Fleischsalat- local seasonal greens, jowl bacon, Leberkäse, mixed seasonal citrus supreme, house made farmers cheese, green tomatoes, pickled red onion, local honey, sherry vin
Third Course:
Tortelloni- braised ham hock and pork shoulder, ramp soubise, morel, pork skin and pine nut gremolata, seasonal micro greens
Fourth Course:
Spring Picnic- charred kielbasa and pork belly, seasonal spring vegetables, rhubarb barbecue, Michigan maple cornbread, grilled potato salad
Fifth Course:
Panacotta- bacon, blackberries, rhubarb, honey, sweet corn
